Harvest Sheet Pan Chicken
This recipe includes everything needed for a nutritious meal all on one pan: fruit, veggies, fiber, lean protein, healthy fats
Veggie/fruit and chicken amounts can be scaled to taste
2 medium sweet potatoes
1 large red onion
Brussel sprouts
2 large Granny Smith apples
Boneless skinless chicken breast
Extra Virgin Olive Oil
Salt
Pepper
Cinnamon
Minced garlic
Preheat oven to 425
Place boneless skinless chicken in a bag
Add cinnamon, salt/pepper, garlic
Mix up and set aside to marinate
Chop up and layer veggies and apples
Season to taste with salt and pepper
Drizzle with Extra Virgin Olive Oil
Mix up to coat well
Place chicken on top and cook until chicken is done
Remove chicken and cook veggie mix more if needed
